# Best cooking instructions:
Take loin out of bag 24hrs earlier and place on plate in fridge. Pat dry skin to remove all moisture and leave overnight.
Pre heat oven on high 230C, score and salt the pork roast.
Cook the roast the pork for approx 20mins then turn down heat to 180/160C for 45mins per kilo.
